THE FACTORY
Our pasta factory is located close to Mulini river park, in Torgiano, on the outskirts of Perugia. A land suited for farming and milling grain since 1300, when Torgiano had eight mills next to the rivers Chiascio and Tevere.
Today, our factory is small and intimate with a unique fragrance of handmade products like the traditional artisanal laboratories.
A WISE TRADITION
We combine ancient techniques and authentic tastes.
A tradition which comes from the territory and renews its identity from our land in 25 years of experience. We are one of the first artisanal factories in the territory. The only one producing and passing on the long tradition of Strangozzi and Pici “with the round shape”, a challenging size in terms of production and drying process. The best techniques require a long machining and a strong perseverance in order to transmit the procedure to the new generations.THE VARIETY OF OUR PRODUCTION
We are masters in the production of special shape of pasta.
Pici and strangozzi are at the peak of our production. Only few pasta factories in Italy are able to achieve this preparation which implies difficult techniques and a long drying process.
Based on a traditional recipe, pici and strangozzi have the most simple ingredients: water and flour. We add some salt in the case of pici.
